Mmm, watermelon. One of the warmer weather's truest delights!

A crowd pleaser if there ever was one, we find ourselves looking for any and every way to eat a watermelon during summer. Obviously it's a total treat when cut fresh, but watermelon also makes for an easy and excellent... side salad!

And so it begins, our Summer Salad Series: starting with our in-house designer Ebony's personal favourite, Watermelon and Feta Salad-non-Salad!

  

Ebony's Extremely Easy Watermelon + Feta Salad

Ingredients
  • Watermelon (the redder the better!)
  • Marinated Greek Feta (the crumbly kind – yum!)
  • Red Onion or Shallots (fresh or lightly pickled if you feel fancy)
  • Fresh Mint
  • Extra Virgin Olive Oil
  • Black Pepper
  • White Wine Vinegar
 
Method*
  1. Cut watermelon into big chunks and pop it in a bowl.
    Set some aside for the kids, who will no doubt decide they don't want it touching the other ingredients when you serve it for dinner. Be ready for everything!
  2. Slice your onion or shallots as thin as you can. I love them lightly pickled in white wine vinegar for some extra tang, but no pressure – we're time poor!
  3. Relieve some stress, and tear up the mint leaves roughly.
  4. Combine all fresh ingredients in a big bowl (aside from the kids' safe and seperated watermelon).
  5. Crumble over your fetta and dress with Olive Oil (either from a bottle, or from the marinated jar if you're feeling lazy efficient!)
  6. Season with black pepper and a little white wine vinegar. And no, there's no exact measurements for this one, just go with your gut.
  7. Et voila! She's ready. Serve it up with your favourite protein, and some chicken nuggets or [insert other beige food] for the kids.

I'm going to be honest here. This recipe is hardly a real recipe – it's really a bunch of ingredients that go together to make an extremely easy, minimal effort "salad".

I'm not ashamed to admit that this salad is for every busy mum out there who knows their kid(s) are only going to eat the watermelon... and that's A.O.K.!
